Kaju translates to Cashews while Katli refers to thin slices. Cashew nuts are soaked in water until they have softened and are then ground to a paste. Sugar solution is boiled down until a single thread forms when two fingers are dipped into it and pulled apart. The syrup is then added to the ground cashews. The paste is then spread and flattened in a shallow, flat-bottomed dish and cut into the signature bite-sized diamond-shaped pieces.

Kaju katli is sometimes called the king of Diwali sweets. It is among the most gifted and most loved traditional sweets. These days it is popular all year round!
